Mealtime Mondays – January 20, 2020 – January 26, 2020

This week we had 2 leftover nights and 5 nights that I cooked a new meal. I also spent part of yesterday making a loaf of banana bread and banana bread muffins, because all of the bananas decided to go over ripe while we were sleeping Saturday night. Bananas and avocados man…they enjoy torturing me! Also, I was just exhausted Sunday, so I didn’t do any of more normal prep work for the week, which means instead of this post being already written up and auto-posting first thing this morning…it is now Monday morning and I am typing this up. Oops.

  1. Tacos with chips and salsa

Recipe: Just mix ground turkey (or beef) and taco seasoning and use toppings of your choice!

Family Taste Rating: 3/4 My husband isn’t a fan of ground meat that isn’t pressed into burger form and prefers chicken tacos. But the rest of us love regular tacos, so once in a while we still make them and he usually eats a couple quesadillas.

Cost: Approximately $8 (6-8 servings)

Time: 15 minutes

  • Keto Chicken Tenders with Corn and Mashed Cauliflower

Family Taste Rating: 4/4 (My kids even loved the mashed cauliflower…and they don’t even normally eat real mashed potatoes!)

Cost: Approximately $14 (5 servings)

Time: 30-40 minutes

*Note: I followed the baked instructions.*

  • Spicy Ramen Noodles with Chicken and Egg Rolls

Find Recipe Here: (For the chicken, I just cooked 4 chicken breasts, seasoned with salt and pepper, in olive oil over medium heat for about 7-9 minutes per side. The egg rolls, I bought frozen and baked.

Family Taste Rating: 2/4 (The noodles were too spicy for my kids, but they are super yummy!)

Cost: Approximately $10 (4 servings)

Time: 30-40 minutes

*Note: I tripled the noodle recipe and used sriracha in place of chili garlic sauce.

  • BBQ Chicken with Homemade Mac & Cheese

Find Recipe Here: (For the chicken, we grilled 5 chicken breasts for 7-9 minutes per side and basted with Stubbs Original BBQ Sauce)

Cost: Approximately $15 (4-8 servings *The cost includes approximately 8 servings of mac & cheese but only 4 of the chicken*)

Time: 40-50 minutes

  • Chicken Alfredo

I used boxed Dreamfield’s Angel Hair pasta, Prego artisan four cheese alfredo sauce, and chicken prepared as described in the ramen recipe above

Family Taste Rating: 4/4

Cost: Approximately $7 (4-6 servings)

Time: 20-30 minutes

Total Cost for family of 4 for 7 dinners (I’m including leftovers two nights): $54.

Bonus: Banana Bread
